Why protein ice cream, and why this one?

Because dessert is where most fat-loss plans die. Not at dinner, at 9 p.m. A bowl that delivers 30 grams of protein and about 250 calories is not a cheat; it is one of your meals wearing a costume. This recipe uses Greek yogurt and whey for the protein, a frozen banana for the texture and sweetness, and nothing that needs a machine, a guar gum order or an afternoon.

Method

  1. Put the yogurt, whey, frozen banana slices, 2 tablespoons of milk, vanilla and salt in the blender.

  2. Blend until smooth. If it will not turn over, add milk one tablespoon at a time. You want thick soft-serve, not a smoothie.

  3. Eat it now as soft-serve, or scrape it into a shallow container and freeze 60 to 90 minutes for a scoopable texture.

  4. If it goes past 2 hours and turns hard, leave it on the counter for 10 minutes and stir. Homemade protein ice cream has no stabilisers, so it freezes firmer than shop-bought.

Approximate, using USDA FoodData Central values for the yogurt and banana and a typical whey isolate label (25 g protein, 110 calories per scoop). Your whey will vary; check the tub.

A 170 g cup of plain low-fat Greek yogurt brings about 17 grams of protein on its own; the whey brings the rest. If the number looks high, that is the point: this is a meal, not a topping.

Troubleshooting

  • Icy, not creamy. Too much milk, or frozen too long. Use less liquid and freeze in a shallow container for 60 minutes, not overnight.

  • Chalky. Some whey powders are. Try an isolate or blend in an extra tablespoon of yogurt.

  • Not sweet enough. Ripe banana matters; a green banana makes bland ice cream. A few drops of liquid sweetener fix it without calories.

  • Too much banana taste. Use half a banana plus half a cup of frozen berries.

  • Rock hard from the freezer. No stabilisers, so it happens. Ten minutes on the counter and a stir.

Does protein ice cream help with weight loss?

On its own, no food loses weight. What this bowl does is make the protein number reachable and the evening survivable, which is where most plans fail.
